Whole Grain Waffles

Last night we had BFD.  You know, breakfast for dinner.  Oh, man, it was good!  Our kids ate like champions.  Owen ate more than twice as much as me; and one could argue that I'm eating for two, so he's eating for...four?

And this isn't just a plain old kid-friendly meal.  This is - *gasp* - health food!  We served scrambled eggs (hello, protein), turkey bacon (our kids think that the real stuff is just something restaurants make), and whole grain waffles.  The waffles have no refined flour or sugar, and are chock full of healthy grains and omega 3s (the good kind of fats).  And I got to thinking, I really need to share this goodness with you!



This is another recipe I make with my freshly milled flour.  If you don't have a mill, go ahead and use store-bought whole wheat flour.  You just might want to adjust the amounts; use a little less to start and see how that works for you.

Also, these freeze very well.  Steve and I eat waffles almost every morning.  What a great start to the day!  They keep us full, don't give us a sugar-crash, and give us the energy to last until lunch.  We just toast them (or microwave them, or both, in my case), and it's almost as good as fresh!

Of course, you can top them with butter or syrup...or, have you ever tried skipping the butter?  I actually like them better!  Or go the extra mile with berries and vanilla yogurt.  Yum!  Or, you can take a page from Owen and just eat one out of hand before anyone else even gets to the table.

Here's the recipe:

Whole Grain Waffles Makes 8 waffles (our boys each ate two waffles)

1 1/2 cup whole wheat flour
1/4 cup ground flaxmeal
1/4 cup rolled oats
4 tsp. baking powder
1 tsp. cinnamon
2 eggs
1 3/4 cup skim milk (or any other milk)
1/4 cup oil (we prefer canola)
1/4 cup unsweetened applesauce
1 tsp. vanilla
1 tbsp. raw sugar (or regular sugar, if desired)
1/4 tsp. salt

In a medium bowl, whisk together flour, flax, oats, baking powder, and cinnamon.  In a small bowl, whisk eggs, milk, oil, applesauce, vanilla, sugar, and salt.  Make a well in the center of the dry ingredients; add the wet ingredients.  Stir gently to combine.  Don't overmix; the batter will be lumpy.  (At first the batter may seem thin. Let it sit 3 minutes, or so, and it should thicken up.  Add milk or flour as necessary.)  Spray a Belgian waffle iron with cooking spray.  Cook waffles according to iron directions.
