Never-Fail Garlic Bread



I used to really struggle to make good garlic bread.  It would be too garlicky...or too bland.  I just couldn't seem to get it right, so I gave up and bought frozen garlic bread.  But that felt unnecessary.  Surely, I could handle something like garlic bread, right??

Well, I've finally gotten it all figured out.  And now I'm going to share the fruits of my trial-and-error with you.

Garlic Bread
Serves appx. 8

1 loaf Italian bread
1 stick butter, softened
1 clove fresh garlic, minced
1/4 tsp. salt
pinch pepper
1 tsp. dried parsley

Cut bread lengthwise in half.  In a bowl, combine butter, garlic, salt, pepper, and parsley.  Spread each half with the butter mixture.  Slice bread into 2-inch slices.  Place, butter-side up on a baking sheet, and broil for a few minutes until lightly golden and bubbly.  Serve immediately.

[Garlic Notes: I like fresh garlic so much more than the granulated garlic, garlic salt or powder.  I've noticed that it can stay good for several weeks when I keep it on the kitchen counter.  So I buy a bulb of garlic at a time and use it in various recipes over several weeks.  It's inexpensive and I have very little waste.

Also, if you plan to use a lot of fresh garlic, get a hold of a garlic press.  (Pampered Chef makes very good ones, but you can get any old thing from Target or Wal-Mart if you want.)  It'll save you a lot of work in the long run.]
