This isn't a baking blog or a ministry blog (but I'll talk about those), and it's not a gardening blog (goodness, no). This is just a blog about anything, and maybe everything, that I'm thinking about right now.

Chocolate Peanut Butter Delight

This dessert's name isn't nearly as good as this dessert itself.  Here's a challenge for you: Make this dessert for some friends or family and then rename it for me, please!

This easy dessert combines chocolate pudding with a peanut-buttery crust, and it's topped with refreshing whipped cream.  It's a nice, light finish to a heavy dinner, and the leftovers are outstanding!

Here's the recipe:

Chocolate Peanut Butter Delight
Serves 12-16

1/2 cup peanut butter (I prefer creamy)
1/3 cup butter, melted
1 1/2 cup graham cracker crumbs
1/2 cup sugar
1 pkg (5.9 oz.) instant chocolate pudding mix
3 cups cold milk
1 tub (12 oz.) whipped topping (like Cool Whip)
peanuts or grated chocolate for topping

In a bowl, combine peanut butter, butter, graham cracker crumbs and sugar.  Press into the bottom of a lightly greased 9x13 baking dish.  Refrigerate while you prepare the pudding.  In a medium bowl, combine milk and pudding mix.  Whisk for about 2 minutes until it starts to thicken.  Pour over crust.  Chill for 30 minutes.  Top with whipped topping.  Sprinkle with chopped peanuts or grated chocolate, or just leave it plain.  Chill until serving.

You can easily halve this recipe - just use a smaller package of pudding mix and adjust the amount of milk according to package directions.  Halve the rest of the ingredients and make it in a 8- or 9-inch square dish.
