Yesterday I posted a recipe for Double Tomato Bruschetta. Have you ever tried to cut tomatoes with a dull knife? You end up squishing them and hardly making a dent! It can be really frustrating. Not to mention dangerous when the knife slips off the skin of the tomato and cuts your hand!
Sharp knives are absolutely imperative in a busy kitchen. I know what you're thinking: "If my knives are sharp, I'll cut myself all the time. Sharp knives aren't safe around me!"
False. Bears, beets, Battlestar Galactica. (I just made a few new friends, and completely confused a few other people.)
Sharp knives actually cause less accidents in the kitchen because the knives don't slip, they cut where you intend them to cut.
And not to mention, oh, the joys of cooking with a sharp knife! Suddenly you can chop like a Food Network star!
But listen, you don't have to run out to the store and spend $150 on a new knife! ($20? Not that either.)
Run down to Prince of Blades in Old Colorado City (here in Colorado Springs). This guy does a great job of sharpening knives. If you're interested, he can handle other tools as well - gardening tools, lawnmowers, even swords for you King Leonidas wanna-bes. (Did I just lose a bunch more of you with that reference?)
